My Rustic Apple Pie Recipe…

This week I suggest to you one of my favorite cakes for breakfast: it is tasty, easy to prepare and cheap… today I’ll share with you my Rustic Apple Pie recipe! Indeed, due to several reasons, I bake this pie very often. The main reasons are: at first it is very easy and quick to prepare; the second reason is because everyone loves apple pie; the last main reason is due to the fact that this cake allows me to use all the apples that I don’t want to eat.

Everybody knows that “An apple per day keeps the doctor away”, it is absolutely true… but, especially in this season, there are a bunch of different fruits and the apples are less desirable now. In any case, I don’t want to waste the food! For this reason when I have some apple I bake one of the multiple variations of the apple pie!

Let’s see what I’ve done and How I’ve baked my Rustic Apple Pie

The apple pie is one of the most common cakes in the world: american Apple pie, German Strudel… there are several version! The one I’ll show you in this post is one of the most easy recipe and I call it the Rustic version of the apple pie. Maybe is not the most beautiful version, but I promise it is delicious!

There are three kind of apple particularly good for this recipe, but you can use any kind of apple you have at home. The suggested varieties of apples are: Golden Apples (yellow, with thin skin and sweet pulp), the Fuji Apples (red and with crunchy pulp, a little bit acid) and the Royal Golden Apples (bicolor, and particularly sweet).

Time to prepare 20 minutes – Time to cook 60 minutes

Ingredients for an apple pie with a diameter of 24 cm

  • 700 gr of apples;
  • 200 gr of flour;Ingredients
  • 200 gr of sugar;
  • 100 gr of butter;
  • 200 ml of milk;
  • 2 eggs;
  • the juice of one lemon;
  • 1 teaspoon of baking powder
  • vanilla essence (optional).

Useful Tools:

  • Knife for fruit;
  • Terrines;
  • Little pot for melting the butter;
  • Electric whisk;
  • Spatulas and manual whisk;
  • Baking pan.

Procedure:

The first thing I did is turning on the oven and set the temperature at 180 Celsius degrees (356 Fahrenheit degrees). The following step was washing, peeling and cleaning the apples. When I was ready I cut the apples in cubes (or slices if you prefer) and I put my cubes into a terrina and I put in also the juice of the lemon. This step was necessary to avoid the the apple became dark. I put the butter in a little pot and I melted the butter at “bain-marie” (you can also use the microwave, that is the quick solution). In the mean time, in a different terrine, I put the eggs and the sugar and I mixed them with my electric whisk. After that I added the melted butter and I blended again. Now was time for all the other ingredients in the following order: at first the vanilla essence, then the baking powder, the milk and at last the flour little by little. I blended the mixture very carefully and when all the clumps were gone, I added the apples ( but first I removed the lemon juice) and I mix all the ingredients with a spatula (or with a tablespoon).

I oiled with some butter the baking pan and I put the mixture inside.

I put my cake in the hot oven (180 Celsius degrees – 356 Fahrenheit degrees) for 50/60 minutes. When time was gone, i check the cake with the toothpick. The cake must be brown on the surface and not too much wet inside. When the cake was ready, I remove it from the oven and I left to cool for a while. The cake must be served warm. If you want you can cover the surface of the cake with sugar or cinnamon. At last, if you desire more pleasure you can add raisin or pine nuts in the mixture.
