As usual on Sunday we talk about food, recipes or restaurants experiences or reviews. Today I propose a recipe in which I’m not the chef, indeed this is one of my husband’s recipe. In my family the real chef for first dishes and second dishes is my husband, he is great in this, I’m the queen of the bakery and sweets… By the way, in today’s recipe, my husband cooked and I was his little helper!
If you follow my blog, you already know that few weeks ago, I talked you about a popular Tuscan fish restaurant (here the link to related post), where I eat the famous “Island’s Soup”. I really love this soup and I talked about it for days at home. I talked so much about the soup that at the end, my husband decided to prepare a similar soup for me. Actually he knows my tastes so much and he know how much I love shrimps, scampi, clams and stuff like that, so the soup he cooked for me was customized and tailored on my tastes. Although the original recipe includes also tiny octopuses and squid (and my husband loves them), he knows that I really don’t like them so much so, he removed this ingredients from the recipes! This is true love for me!
Due to this I called this soup : The soup of the fallen in love husband!
Let’s see what he has done!
For a great fish soup, the true secret is to choose only fresh fish!
Time to prepare: 20 minutes – Time to cook: almost 60 minutes
Ingredients for 2:
- 500 gr of clams + 300 gr of mussels (unfortunately we didn’t find fresh mussels so our soup didn’t include them);
- 4 filets of tub gurnard
- 200 gr of whole shrimps
- 2 scampi
- 2 big shrimp
- 8 slipper lobster ( a specie who lives in Mediterranean sea and eastern Atlantic ocean)
- 300 gr of grape tomatoes;
- 100 gr of tomatoes sauce;
- White vine;
- Extra virgin olive oil;
- Bread
- Garlic
- Salt and pepper (and if you like it spices like bay tree leaves and thymus gland)
Useful tools:
- A big frying pan with cover;
- Terrine;
- Cutting board and knife
- Scissors;
- Special knife for filleting.
- Procedure
The first step was to take care of clams for removing all the sand from their inside. For doing that it was enough to put the clams inside a terrine, to cover them with water and add a lot of salt. In this way in 20 minutes the clams released all the sand and they were clean. In the meanwhile we prepared all the other ingredients.
We washed the scampi and with the scissors, we cut the back of them. This cut will help you later when you can remove easily the shell thanks to it! We washed carefully also the all the shrimps and the slipper lobster. We removed fishbone from the tub gurnards and we cut them. At last we cut in half the tomatoes.
All the ingredients were ready… it was time to cook!
Put inside the frying pan 2 pieces of garlic and few extra virgin olive oil. When the garlic started to become gold (not brown) we added the clams and we cooked covered for almost 5 minute (this time should be necessary for let the clams open themselves).
We added the little shrimps, the big ones, the scampi and the slipper lobster, we covered and we cooked the for 5 more minutes. At the end we added the tub gurnard and few fish broth. We covered again the frying pan and we cooked all for 10 minute slowly.
After 10 minutes, we added the tomatoes and the tomato sauce, salt and pepper (and spices if you like it) and we cooked for additional 15 minutes.
We added a glass of white vine, we covered and we cook for last 20 minutes mixing frequently (pay attention if your soup is too dry you should add some fish broth).
During the cooking time, we cut the bread and we toasted slightly. We put the toasted slices on the plate and add few olive oil on it.
We remove the soup from the stove and we put in inside the dishes over the slices of bread (pay attention to fair share the big shrimps and scampi!). We served the soup hot.
This is the soup that my husband prepared for my specific tastes!
Like usual the best part in cooking is to try new options and variations, this is only an idea from which you can start! By the way I assure that the “Soup of the Fallen in Love Husband” is absolutely amazing!
