Healthy dinner in few minutes…

As you probably know, few weeks ago I delivered my lovely daughter. Now It’s everything amazing but, at the same time it’s really exhausting!
The most destabilizing fact is that how this tiny adorable human is able to absorb our time! Days passes and I’ve the feeling that I’ve done nothing and, at the same time I’m terrible tired!
By the way, I did’t give up! I strongly manage my little spare time for take care of my husband and myself as well and today I decided that we deserve and delicious and healthy dinner!
In these last days too often we are so tired and we decided to order our dinner. But not today!

My Healthy dinner: fish and vegetables

Let’s see what i’ve done and how I made it

Orata all’acqua pazza (restyled) for 2:

  • One orata about 500 gr if it is already eviscered it is better;
  • Almost 400 gr of tiny tomatoes;
  • Garlic;
  • Parsley;
  • Black Olives (in the original receipe there are no olives, but I love it and ai deceided to put some olivas in this recipe);
  • Salt pepper and EVO oil;
  • A glass of water;
  • An half glass of withe wine;
  • An oven pan.

Setting up the orata is really simple. First of all I eliminated all the fins and the scales. If not already eviscerated, it is necessary to eviscerate the orata.

I put inside the opened belly of the fish some salt, pepper and some garlic and parsley.

I cut in cubes the tomatoes, I chopped out the parsley and cut the garlic in thin slices.

I put some EVO oil on the oven pan, I put also the orata on it and I surrended the orata with the other ingredients: the cubes of tomatoes, the black olivas, the slices of garlic and the chopped parsley. At last I poured the water and the wine. Be careful the liquid level shouldn’t exceed the half of the fish.

I put my orata in the oven. 220 Celsius degrees for 30 minutes.

Delicious side dish: au gratin vegetables

For this side dish I cooked some zucchinis, tomatoes, red onion (but you can also uso eggplants). For the gratin I prepare a kind of mix composed by bread crumbs, garlic powder and chopped parsley. I chopped also in tiny cubes some little tomatoes.

I cut the vegetable in slices (non too thin) and I laid down them on the oven pan covered with parchment paper.

I made of cross cuts on zucchini I added salt and pepper and some oli. I put some gratin mix over each slice of vegetable and the tiny tomatoes cubes on the zucchinis. I poured an additional EVO oil and I put the pan in the oven, 220 celsius degrees for 30 minutes.

Quick Trick: When I prepare my mix for gratin I used to prepare a lot of it and I storage the exceed in the freezer. In this way it is ready to used in any occasion.

In only 30 minutes of cooking and with a preparing time of about 15/20 minutes here it is my healthy ad yummy dinner.
