Stuffed Tomatoes and Zucchinis

Like each week, today I’m going to show you two of my favorite recipes for this season.
In summer, we have a lot of vegetables and we can use our fantasy for cook them in different ways. Tomatoes and zucchinis are always in my home and they are super organic because they are from my parents or my parents in law vegetable garden. Some days ago my refrigerate was full of tomatoes and zucchinis and for this reason I tried some recipes for cooking them in an unusual way. I was looking for some original recipes and, like I do usually, I took some of these recipes, I mixed them together for creating a new one… At the end the results were Tomatoes and Zucchinis stuffed in cool and hot version.

Let’s see what I’ve done

1. Stuffed tomatoes with tuna’s cream

Time to prepare 10 minutes + time to boil the egg – the recipe doesn’t need to cook

Ingredients for 3 tomatoes:

  • 3 red tomatoes;Stuffed tomatoes ingredients
  • 1 egg;
  • 90 gr of tuna;
  • 1 tablespoon of capers;
  • 2 tablespoons of black olives (almost 7/8 olives);
  • 3 tablespoons of mayonnaise;
  • parsley;
  • salt and pepper.

Useful tools

  • 1 pot;
  • terrina;
  • forks and spoons;
  • cutting board and knife.

Procedure
Like first step I put the egg in the pot with some water for boiling it. In the meanwhile I washed the tomatoes and I cut the top of them. With a spoon I removed the inside part of the tomatoes, I salted them and I put them upside down in a dish for removing the internal water.

When the egg was boiled I let it cool down and after that I removed the shell and I cut the boiled egg. I cut also the capers and the black olives in not too small pieces. At last I I chop up the parsley. I put in a terrina the grounded egg, the capers, the olivas, the parsley and the tuna (remember to remove the oil from the can). I added salt and pepper and at last also the mayonnaise. I mixed all the ingredients carefully. With a spoon I put the mixture inside the tomatoes and I put on the top the part of the tomatoes I cutted before. I put everything in the fridge. The stuffed tomatoes must be served cold.

2. Zucchinis and tomatoes stuffed with tuna and mozzarella cheese

Time to prepare 15 minutes + 5 minutes for slightly boil the zucchinis – time to cook 25 minutes

Ingredients for 2 zucchinis + 2 tomatoes

  • 2 spherical zucchinis;
  • 2 tomatoes;Zucchinis and tomatoes ingredients
  • 150 gr of tuna;
  • 2 slices of white bread;
  • 1 tablespoon of capers;
  • 2 tablespoons of black olives;
  • 1 mozzarella cheese;
  • 1 egg;
  • parsley;
  • garlic;
  • olive oil;
  • salt and pepper.

  • baking pan.

Procedure
Because I need the hot oven at the beginning I turned on the oven at 180 celsius degrees (almost 350 fahrenheit degrees). I washed the zucchini and tomatoes and I removed the top of them. I cook the zucchini in salted water for 5/7 minutes. I removed the zucchini from the pot, I let them cool down and with a spoon I removed the inside part from the zucchinis and from the tomatoes as well. I put inside some salt and olive oil. On the cutting board I chop the parsley, and a few of garlic. I cut also the capers, the olivas and the mozzarella cheese.

In a terrina I added the tuna (remember to remove the oil), the olives, the capers, the cubes of mozzarella cheese and the parsley and garlic and the egg and at last two slices of white bread wet. I mixed carefully all the ingredients. I stuffed the zucchinis and the tomatoes with the mixture and I put them on the baking pan. I put everything in the hot oven at 180 celsius degree (350 Fahrenheit degrees) for 25 minutes.

The zucchinis and tomatoes must be served hot.

In this post I showed two recipes I tried for eating these delicious and healthy vegetables. I used tuna for stuffed the zucchinis and tomatoes because I wanted and healthy and light recipe, but you can replace the tuna with some sausages. I plan to try this second option!
