Hot Milk Sponge Cake: My Recipe

As you probably can image reading the recipes section of my blog, one of the things I mostly love is prepare cakes. Although I don’t like so much eat a lot of sugar, baking a cake or preparing some cookies give to me an incredible feeling of relax and happiness and my mood as well is super good when I’m cooking some cakes! In other words I’m pretty sure that baking gives awesome vibrations! Another good point of preparing a cake, for my family is the amazing smell that the oven produces during the cooking time all around my apartment… I love it!

Actually another thing I love is sharing with you my favorite recipes! Today’s recipe is really easy and absolutely amazing and know all around the world. Today I’m going to show you my recipe for the Hot Milk Sponge Cake.

If you are asking yourself the reason of the name, it is due to the fact that this particular cake has a special consistency super fluffy and a particular taste as well, different from all the other cakes.

But let’s see how I make my Hot Milk Sponge Cake

Time to prepare 20 minutes, time to cook 30/35 minutes

Ingredients for a cake with almost 28 cm of diameter

  • 200 ml whole milk;
  • 200 gr of flour;
  • 180 gr of sugar;
  • 60 gr of unsalted butter;
  • 210 gr of fresh eggs;
  • A tablespoon of baking powder.

  • Baking pan;

Procedure

Like usual the first thing I did is to turn on the oven at 180 Celsius degrees (almost 350 Fahrenheit Degrees), in this way the oven will be perfectly hot when I will need it.

I put the eggs in a  terrina and I started to mix it. In the meantime I added little by little the sugar continuing mix with my electric whisk. I mixed well until the mixture became clear and spumy.

I added a spoon per time  of the flour and the baking powder until I finished my ingredients. I made it continuing mix with a spatula carefully from the bottom to the top. When all the ingredients were well melted together I took away 2/3 tablespoons of mixture and I put this in a different terrina.

I put on the stove the pot with the milk and the butter and I warmed it up until the milk was hot. I went really close to the boiling point, but I turned off the fire before the milk boiled.

I poured the hot milk in the second terrina (the one with the 2/3 spoon of the mixture) and I started mix with energy until I obtained a sort of batter. I put this batter in the main terrina and finally I mixed again all together. At this point you can add also some grated lemon rind or few drops of vanilla essence. I didn’t add anything because, in my opinion the taste is super good without additional flavours.

The last step was to pour the mixture in the baking pan and put it in the lower level of the hot oven (180 celsius degrees/350 Fahrenheit degrees) for 20 minutes. After 20 minutes I moved the cake pan on the medium level of the oven and I let it cook for additional 10/15 minutes.  When the cake was cooked I removed it from the oven and I let it cool down.

You should serve your Sponge Cake warm possibly with some sugar on the top.

I used a special Baking pan with the shape of a flower and actually my cake was super cute thanks to this. Here my result!

I can assure that this recipe is really simple and absolutely good in taste. The sponge cake is perfect for your breakfast and also for your lunch or dinner dessert. For this last option I suggest to pull together some cream, ice cream or fruit.
