Biscuits for this fall/winter season

Hello Friends!

Days starting become cold and short, and whit this condition I prefer to stay at home chat with some good friends, a cup of tea or chocolate instead going out. This means that I need some biscuits for my friends and I. And as you can image, I really don’t like to buy biscuits, I prefer to bake them by myself!f!

For my Chocolate & Tea afternoon with some close friends I have a specific biscuits that fitting the occasion. I mean I love my shortcrust pastry biscuits (here my recipe) and the cupcake I use to bake are delicious (here the recipe) but for these afternoon I prefer biscuits called “lingue di gatto” (literally cat’s tongues) and simple and light chocolate cookies.

Let’s see what I’ve done

Cat’s tongues biscuits
For 30 biscuits you need:

  • 100 gr butter ambient temperature;
  • 100 gr flour;
  • 100 gr of albumens;
  • 100 gr sugar;
  • Sac a poche;
  • Bowl, oven pan and parchment paper.

Preparing these biscuits is really simple and quick:
I put in a bowl the butter, the sugar and I mixed them with electric whisk. Little by little I added the half of the flour and the albumens (I melted them continuously) and at the end the rest of the flour.

I mixed the ingredients until the mixture become homogeneous. I put the mixture inside the “sac a poche” and I let it cold for almost 10 minutes in the fridge. In the meantime I put some parchment paper on the pan. With the sac a poche I made some stripes of mixture on the pan (almost 7X2 cm). Pay attention to leave enough space between stripes.

I put it on the oven 200 Celsius degrees for 15/20 minutes (unti the biscuits have a gold surface), I let them cool dow and I served it.

What about the eggs yolk? No panic, you can use it for a delicious cream (here the recipe).

My chocolate cookies without eggs and butter.
For these biscuits you need:

  • 200 gr of flour;
  • 40 gr of corn flour;
  • 100 gr of sugar;
  • 120gr oil;
  • 80 gr milk (or soy milk if you prefer a veggie recipe);
  • Chocolate drops;
  • Baking powder.

I started turn on the oven at 180 Celsius degrees. I put in a bowl the oil and the milk and I mixed them carefully. I added to this mixture the sugar and I mixed them carefully.
In a second bowl I mixed the flour, the corn starch and the baking powder.

I added little by little the mixed powder in the bowl with the milk and the oil and I melted them at the beginning with a spoon and at the end with my hands until I obtained a kind of smooth ball. Suggestion: if your ball is too hard added some milk, and if your ball is too sticky add some flour.

I made little balls with the mixture and I put them on the oven pan. I flattened the balls with a glass and I added some drops of chocolate on the top of the biscuits. I put everything in the oven for almost 15 minutes).

I let them cool down and I served it.

If you switch the cow milk with soy milk you obtain a perfect veggie recipe.
